550g - 600g raw prawns
80ml Olive Oil
1 1/2 tbsp paprika
1 tsp red pepper flakes
2 tsp salt
1 large pineapple cut in to large chunks
4 limes quartered (for garnish)
Method
Soak eight wooden skewers in water for several hours. (This will minimise the burning.
Stir together the oil, paprika, pepper flakes, and salt. Add the shrimp and lightly toss until well coated.
Run skewers through the shrimp and pineapple pieces.
Wrap the exposed ends of the skewers in foil to prevent burning or catching fire.
Grill at a medium heat until the shrimp turn pink and begin to curl. (Approx 2 to 3 minutes per side.)
