I get asked a lot - what's a good snack to have before class? I love these fruity oats bites. Quick and slow release carbs and made of good wholesome ingredients. They are so easy to make. I usually cook a double batch and freeze them, just pulling a couple out for the day.

INGREDIENTS
250g Rolled Oats
2 eggs
1 tsp Cinnamon
1 tsp Ginger
150g Low Fat Margarine
20g Pumpkin Seeds
50g Dried Cranberries
30g Sultanas/Raisins
150g Apple Sauce
30g Honey
WHAT TO DO
Line a baking tray and pre heat oven to 180C
Mix all dry ingredients in a mixing bowl.
In a saucepan melt the margarine and add the honey.
Add the margarine and honey mix to the dry ingredients and mix in the beaten eggs and apple sauce.
Transfer to a baking try and cook for 15 minutes.
